Buttermilk Pancakes with Dec's Hot Honey Butter Sauce & Crispy Bacon
Ingredients for Buttermilk Pancakes: 🥞
500g Odlums Cream flour
75g Sugar
20g Baking powder
5g salt
3 x eggs
500ml Avonmore Buttermilk
Ingredients for Dec's Hot Honey Butter Sauce: 🍯
225g Kerrygold Butter
70g Dec's Hot Honey
10/20g Maple Syrup (optional)
Plus:
Streaky Bacon - We used Dunnes Stores Simply Better Whiskey Smoked Bacon
Method:
1. Melt 225g of butter and Dec's hot honey together in a pot, take out half of the mixture and put in to a bowl, place into the fridge. We will use this for quenelle’s on top of the pancakes.
Keep the sauce warm in the pot.
2. To make the pancake mix, add all the dry ingredients into a bowl and mix. In another bowl
beat the eggs and incorporate the buttermilk into the eggs while mixing.
Then add the liquid to the dry mix. Mix altogether and get a gloopy consistency and set in
the fridge for 30 mins.
3. Line out the streaky bacon on a tray and place in the grill or oven! Or even better still, fry
them off in a pan!
4. Time to make pancakes! Get a large pan, if you have one. Medium to high heat, add a
generous portion of butter to it. When the butter has melted, add a good dollop of pancake
mix. Add another if you have room. Wait for the bubbles to appear in the pancake then flip
over, the pancake should have a golden appearance, or leave it longer to get a nice charr on
it! Repeat this for as many pancakes as you need. Stack 'em high as they say!
5. Stack them on a plate, add the bacon on top or to the side, get a nice dollop of the butter
sauce from the fridge. Does not have to be a quenelle!
Then get the heated butter sauce and drench the pancakes...
Some tips: Add maple syrup if you want it sweeter. Also you can add berries and cream if you don't want the bacon!
