Give your CRUSH a PIZZA your heart this Valentine's Day!
This recipe serves 2 - but to be honest, you'll want it all for yourself once it's made. ;)

Ingredients for the Pizza dough: (or alternatively use your choice of base available in local supermarkets - we've previously used Pizza da Piero)

  • 1kg 00 pizza flour or strong flour
  • 620ml lukewarm water
  • 30g salt
  • 7g dry yeast

Method:
Pour the water into a bowl and add the 7g of dried yeast until dissolved and foamy.
Add the flour and salt together in another bowl, then incorporate the flour mix to the water
and yeast while mixing the whole time with your lamh.
When all the flour is mixed, knead it for 5-6 mins. Shape it into a ball and leave rest in a
covered bowl for 20 mins.
Knead the dough again for a final minute or 2 before shaping again into a ball and leave it
proof for 2 hours in room temperature in a covered container.
When the time is up, empty out the dough on to a clean surface and divide the dough into (
x6 ) 270g shaped balls, place the balls onto a tray and cover.
leave to rest for 1.5 - 2 hrs then use! Or place in fridge for overnight ferment.
Take out of fridge and rest at room temp for 1.5 - 2 hrs, then ready to use!
We suggest give the 24hr ferment or even 48hr!

Ingredients for toppings:

Courgette x 1
Rapedseed oil 400ml
Garlic bulb x 1
Purple Cress x 1 punnet
Fior di latte mozzarella 100g
Ricotta 50g
Pecorino 20g
Capers 10g
Chives 10g
Rivesci Cashew Chilli Crush 1 x tbsp or 2!

  1. Get a medium bowl/pot, pour 400g rapeseed oil into it, de-skin all the garlic and pop into the oil. Place the submerged garlic into oven at 120 degrees or on the stove on a small heat until the garlic is golden and soft. This is now ready to be used.
  2. Get your courgette and peel it into ribbons with a potato peeler, put into a bowl for pizza assembly
  3. Have all ingredients ready to assemble onto your pizza base.
  4. Dollop the ricotta with a tablespoon and smear it across the base.
  5. Tear the Fior di latte and place on the ricotta pizza base and grate the pecorino over this also!
  6. Let the courgette ribbons fall gently over the pizza base, about 4 of them. Take your roasted garlic and plot them around, even crush them if you would like. Also the same with the capers.
  7. Place in the oven and cook until evenly cooked.
  8. Take out once cooked, place on a chopping board and add Cashew Chilli Crush, purple
    cress and finish with chives!
