Sourdough Toastie - Green, White and Gold!

In celebration of St.Patrick's Day and all things green, white and gold, Declan created a delicious sourdough toasted sandwich recipe for you all to enjoy! Check out the recipe video here...

Ingredients:
Sourdough x 2 slices 
Asparagus spears x 4
Cashel Blue Cheese 30g
Kilmeaden Red Cheese x 4 slices
Mayonnaise x 2 tbsp
Kerrygold 
Rapeseed Oil
Sea Salt

1. Place a pan on the stove, medium heat, slice the asparagus inch size portions, add rapeseed oil to the pan and throw the asparagus into it. Fry for 5mins and season. Check one and see if you want it al dente or softer. Place in a bowl to rest. Clean pan and get it ready for your sandwich

2. Cut nice big crusty slices of the Sourdough, butter it and add mayo. Slice your Kilmeaden and add the aspargus to one side of the bread and then the Kilmeaden, crumble the Cashel blue on, then the red onion marmalade.

3. Close the sandwich and butter both sides, it is up to you if you want to add mayo to the outside. (We do for extra flavour!)

4. Place your pan on a medium heat, add a small amount of rapeseed oil to it. Then place your sandwich on it.

5. Cook to a nice golden char brown, with a weight on top to get an even char. (It is ok if you do not have this.) Flip over and add butter to the pan if needed.
When the cheese is melted and evenly toasted, you can remove.
Enjoy this gorgeous toasted sourdough sandwich.
